I know, I know! Raw vegan desserts can seem intimidating and crazy, but they don’t have to be! I whipped this up using just a few simple ingredients. I often find myself craving sweets but not wanting to deal with the digestive issues that accompany them. This raw vegan banana walnut cheesecake is to die for! It’s very rich and creamy without any dairy or added sugar.

FOR CRUST

  • 1 1/2 Cup Walnuts
  • 1/2 Cup Almonds
  • 1/2 Cup Dates
  • 1/4 Cup Water

Blend ingredients in food processor until consistency of dough. Press into round container then place in freezer.

FOR FILLING

  • 1 Cup Organic Vanilla Soymilk (or Almond Milk)
  • 1/2 Tsp Coconut Oil
  • 1/2 Cup Walnuts
  • 1 Banana

Blend ingredients in high speed blender until consistency of cream. Pour over crust and add walnuts. Freeze for 2-3 hours.

TO ENJOY:

Let thaw until soft enough to cut. Sprinkle cocoa nibs and walnuts on top. Don’t wait too long because this yummy treat will start to melt quickly (see below!)
