Roasted Veggies with Cranberry + Pecan

INGREDIENTS:

  • Cubed Sweet Potatoes
  • Brussel Sprouts (Halved)
  • Cranberries (Fresh + Organic)
  • Candied Pecans (Bought from Whole Foods but the recipe here)
  • Maple Syrup
  • Spices: Cinnamon, Nutritional Yeast (Optional)

TO COOK:

  • Preheat Oven to 375 degrees Fareinheight
  • Roast Sweet Potatoes + Brussel Sprouts:
    • Sweet Potatoes: Coat cubed sweet potatoes in olive oil + Cinnamon
    • Brussel Sprouts: Coat halved brussel sprouts in olive oil, salt, pepper
    • Place in center oven rack and roast for 25-40 minutes depending on the desired softness of veggies
  • To Roast Cranberries:
    • Place cranberries in a small baking dish (I used this) with cinnamon and a bit of maple syrup
    • Place below veggies and cook for 15 minutes.

TO ENJOY:

  • Combine ingredients into a bowl with candied pecans.
  • Slowly add cinnamon + maple syrup to taste. Now be careful here — this recipe is def not healthy because of all the sugar but it can get insane! Start small and taste. The candied pecans create sweetness, the cinnamon balances, and the maple syrup helps to keep it all together.
  • Best served warm 🙂

Winter Pear Salad

INGREDIENTS:

  • Red D’anjou Pears
  • Organic Arugula
  • Pomegranate Arils (Click here to see how to remove the seeds aka arils)
  • For Dressing: Fresh Dill, White Wine Vinegar, Olive Oil, Maple Syrup

TO PREPARE:

  • 1. Dressing:
    • Place Dill and equal parts vinegar, olive oil, and maple syrup into a food processor.
    • Blend until even consistency (although dill particles will remain)
    • Modify to your Taste — If too bitter, add more maple syrup. If too sweet, add more olive oil.
  • 2. Arugula
    • Place clean arugula in bowl and lightly toss with the dressing. The key here is LIGHTLY because too much dressing will weigh down the arugula and make your salad soggy.
  • 3. Add-Ins
    • Slice Pear into thin slices
    • Open and de-seed the pomegranate

TO ENJOY:

  • Add in pears + pomegranate arils to lightly dressed arugula.
  • Gently toss salad and top with fresh dill.
  • Serve with additional dressing on side.
