Winter makes me crave warm comfort food. I’m not much of a chef so I typically order out or go to the Whole Foods hot bar for dinner. Now while this is convenient, it is also expensive!! 2017 is all about self-disciple for me and that extends to my budget. Instead of paying $12 for this same meal from Whole Foods, I decided to make a Rosemary + Thyme Roasted Veggie Bowl!
Ingredients
- Beets
- Broccoli
- Carrots
- Cauliflower
- Cooked Brown Rice
- Mixed Green Lettuce
- Seasonings: Salt, Pepper, Rosemary, Thyme
- Optional: Avocado
Prep + Cooking:
Preheat oven to 425 degrees. Cut veggies and arrange on a baking sheet. Coat with olive oil and salt + pepper to taste (Optional add rosemary for added flavor). Roast for 30-40 minutes checking and stirring every 10 minutes. Your veggie should have a cooked and brown appearance once finished.
To Enjoy
Add veggies + cooked brown rice over a bed of greens. Top with Avocado and Thyme for additional flavor. Drizzle your favorite dressing or olive oil and enjoy!
