This Savory Lunch Bowl is a quick idea for the woman-on-the-go looking for a healthy lunch or dinner! You can even prepare the ingredients ahead of time on Sunday and combine them during the week.

Let me begin by saying, I’m not someone who loves to cook. Cooking is def growing on me, but I’m still one of those people who has a smart answer to the age-old “Can you cook?” question posed to women. Nevertheless, I’ve started making more of my meals as cooking at home is healthier and cheaper than ordering out daily.

I am lucky enough to walk to work and make lunch during my lunch break. I don’t always have much time so I tend to favor quick and easy dishes. Bowls are a great solution because they’re quick and offer plenty of customization!

 

INGREDIENTS:

  • 1 Sweet Potato
  • Cauliflower
  • Tuscan Kale (Or substitute any dark leafy green)
  • Quinoa
  • Spices + Herbs: Thyme, Cilantro, Salt & Pepper
  • Optional: Kalamata Olives, Avocado

TO COOK: 

  1. Cook Quinoa
  2. Cut and Cube Sweet Potato – Add cubes, thyme, and olive oil to a large nonstick skillet over medium heat. Cook with occasionally stirring for 8 to 10 minutes or until desired softness.
  3. Remove Sweet Potato from Skillet
  4. Add Cauliflower + Cilantro and cook a few minutes until evenly coated in oil then remove from skillet.
  5. Add Kale, Quinoa, and Cilantro to the skillet with additional olive oil. Stir while cooking to allow Kale to reach desired softness.

TO ENJOY: 

  1. Add Kale + Quinoa + Cilantro as the base for your bowl.
  2. Mix in Sweet Potato and Cauliflower
  3. Top with Kalamata Olives + Avocado + Cilantro and salt or pepper or your favorite salad dressing to taste!
